Fabulous Follower Friday! Max Brenner ~ Chocolate and Salted Caramel Mousse with Waffles



It goes without saying that all of P11's followers are fabulous. I mean, look at you! But, I was super excited to have Max Brenner start following P11 on Twitter recently. And P11 and chocolate? It's a match made in heaven!

So, what else was there to do but have a little shopping spree in the DJ's city store, and get some of The Bald Man's delicious goodies for a new Fabulous Follower Friday post.


For those of you who aren't near a store (poor you!), Max Brenner was one of the first chocolate cafes to open in Sydney, and still serve fondue, waffles and gorgeous cakes in several spots around town. There is also a great range of takeaway chocolate and gifts available, and I noticed that they also now sell online. Who wouldn't want this chocolate hamper delivered for a special occasion? Not me (hint hint!!).


So, this week I picked myself up some lovely things and decided to make a Chocolate and Salted Caramel Mousse to serve with Max's ready made waffles. The mousse is very quick and easy to make and keeps in the fridge until you are ready to devour it!

The result was well, fabulous, just like P11's followers!

Chocolate and Salted Caramel Mousse with Waffles

(This will make enough mousse for about 6 people and is based on Nigella Lawson's Instant Chocolate Mousse. You can substitute 250g of dark chocolate if you wish.)




Ingredients

1 1/2 cups marshmallows
50g butter
1 block (150g) Max Brenner Milk Chocolate with Caramel and Sea Salt Pieces
100g Max Brenner Caibos Milk Chocolate Chunks
1/4 cup boiling hot water
1 1/2 cups thickened cream
1 tsp vanilla extract
Raspberries or Strawberries to serve
Icing Sugar (optional)

Instructions

1. Place marshmallows, butter, chocolate and water in a small saucepan on low heat and allow the mixture to melt. Stir to combine.

2. In the meantime, whip cream and vanilla essence with an electric mixer until soft peaks form.

3. Slowly add chocolate mixture to the whipped cream and fold through. Don't be tempted to mix or stir!

4. Warm ready made waffles in a sandwich press for 1-2 minutes.

5. Serve mousse, waffles and raspberries with a sprinkle of sifted icing sugar.

Raspberries and icing sugar - making mediocre photographers look like experts!
